Happy Pancake Day!

Now I don't know about you but I love pancake day!! Any excuse to skip dinner and stuff my face full of all things sweet & chocolatey (Chocolate sauce & squirty cream is my personal favourite FYI) is fine by me.
 
Here is a cheeky chocolate pancake recipe that I found over at Cooking Classy which I will definitely be giving a try this evening. I have a major sweet tooth and am a particular chocoholic so surely chocolate pancakes have got to be even more enjoyable than regular pancakes right? Jaclyn's recipe's are to die for so definitely pop over & check them out if you get a chance - plenty of pancake inspiration!
 
Chocolate Pancakes with Chocolate Sauce, Strawberries & Bananas
 
Prep Time: 20 mins          Cook Time: 2 mins          Yield: 12 pancakes  

 
Ingredients
1/3 cup granulated sugar
1/3 cup cocoa powder
1/3 cup light brown sugar
1 1/2 cups of flour
1 tsp of baking soda
1/2 tsp of salt
1/2 cup of whole milk
1/2 cup low fat buttermilk
2 large eggs
3 1/2 Tbsp of vegetable oil
1 1/2 tsp of vanilla extract
butter for pan (if needed)
fresh strawberry & banana slices
 
Chocolate sauce
8 oz. chocolate chips
1 cup heavy cream
 
Directions
Preheat a frying pan or griddle on high. In a mixing bowl whisk together the granulated sugar and cocoa until well combined. Stir in light brown sugar followed by flour, baking soda and salt. Make a well in the centre of dry mixture and set aside. In a separate bowl mixing bowl whisk together milk, buttermilk, eggs, vegetable oil and vanilla. Pour wet mixture into dry mixture and whisk to blend (don't overmix batter should still have some lumps). Butter pan if necessary, pour batter into pre heated pan 1/4 cup at a time and slightly spread batter in a circular form outward (so the centres aren't much thicker than the edges) and allow to cook until bubbles begin to appear on the surface, about 1 minute. Then carefully flip pancake to opposite side and cook until done.
Serve warm, topped with chocolate sauce, strawberries and bananas.
 
For the chocolate sauce: Place chocolate chips in a medium heat proof bowl. Bring heavy cream just to a gentle boil in a small saucepan over medium heat. Pour hot cream over chocolate chips and stir until chocolate has melted. Note that chocolate sauce will thicken as it cools, also if you want a thinner consistency you can add a few more tsp of hot cream. Reheat as needed in a bowl over a simmering pan
